Banana and chocolate chips cookies

 

Hmmbanana_and_chocolate_chips_cookiesm, cookies with banana and chocolate. Two of my favourite flavours joined together to get a yummy cookie. I definitively love Sundays!

 

For 15 cookies

  • 125g white flour
  • 75g brown flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 120g white sugar
  • 100 g de butter
  • 1 egg
  • 100g chocolate chips
  • 1 ripe banana

Preheat the oven at 180° C.

Mash the bananas in a mixing bowl. Then add butter and  sugar. Mix well to get a creamy mixture. Then add egg, flour, baking powder and baking soda. Mix everything well before adding the chocolate chips. Stir the mixture but not too much.

On a baking sheet, drop by heaped teaspoons or tablespoon if you want to have big cookies.

Bake 8 minutes. When they are done, let them cool for a minute on the baking tray, then cool on a rack. If you want to have crunchy cookies, bake them a little bit longer.

Hazelnuts and Chocolate Chips Cookies

Hazelnuts & Chocolate Chips CookiesAnother cookie recipe but as we say in French; when we love we don’t count!

For 20 cookies

  • 210 g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 75g brown sugar
  • 75 g white sugar
  • 100 g de butter
  • 1 egg
  • 60 g chocolate chips
  • 70g chopped hazelnuts

Preheat the oven at180° C.

In a bowl, mix butter and  sugar. Whip well to get a creamy mixture. Then add the egg and after the flour, the baking powder and baking soda. Finally, add the chocolate chips and chopped hazelnuts. Don’t stir too much the mixture.

On a baking sheet, drop by heaped teaspoons or tablespoon if you want to have big cookies.

Bake 10 minutes. When they are done, let them cool for a minute on the baking tray, then cool on a rack. Don’t bake them too much otherwise the cookies will be dry!

Coconut and Chocolate Chips Cookies

Coconut and chocolate chips cookiesCookies are for good my favorite biscuits. This time, I add some coconut for more exotism!

  • 80g chocolate chips (dark or milk chocolate according to your taste)
  • 50g dessicated coconut

Preheat the oven at 180° C.

In a bowl, mix butter and  sugar. Whip well to get a creamy mixture. Then add the egg and after the flour, the baking powder. After, add the coconut and finally the chocolate chips. Don’t stir too much the mixture.

On a baking sheet, drop by heaped teaspoons or tablespoon if you want to have big cookies.

Cranberry and white chocolate cookies

Cranberries come from North America. We don’t know them very well in France even if we can see them now appearing in juices or cookies in the supermarkets. Here in London, it is quite easy to find them so I decided to buy some and make cookies. They are also very healthy since they are a rich source of antioxidant. All I know is that these cookies were a success. One of my friend was here for the weekend and she couldn’t stop eating them. She wasn’t the only one…

For 15 cookies

  • 70g butter
  • 65g brown sugar
  • 65g white sugar
  • 1 egg
  • 115g flour
  • 1g baking soda
  • 80g dried cranberries
  • 80g white chocolate chips
  • 5 ml cognac

Preheat oven at 180°C.

In a bowl, cream together the butter, brown sugar, and white sugar until smooth. Add the egg and the cognac. Add then the flour and baking soda, stir until well combined.

Mix in the white chocolate chips and cranberries.

Drop by heaping spoonfuls onto a baking sheet.

Bake the cookies for 10 minutes.

Chocolate Chips Cookies

One of our best friends visited us this week.  Like us, he loves sweety treats so I decided to go for some cookies. Below is the recipe I followed.

For 15 cookies

220 g flour
1 teaspoon of baking powder
100 g brown sugar
50 g white sugar
100 g de butter
1 egg
150 g chocolate chips

In a bowl, mix butter and  sugar. Whip well to get a creamy mixture. Then add the egg and after the flour, the baking powder and the chocolate chips. Don’t stir too much the mixture.

As always it takes time to make cookies and you only need one minute to eat them. My friend was so addicted to my cookies that I had to hide the box to save some for my lunch at work! However, I was happy to see that my recipe was a success.
